have some lamb in oven,mmmmm.i mad a macaronni & cheese,next i have some mince to use ,i was thinking of meatballs,but not sure what to put in them,how do you make yours,i try to do a few days cooking at a time and freeze it,then if i had a bad day at least my son still gets fed

My meat balls are very basic
I make my meat balls by seasoning the mince with herbs,
Salt n pepper and just shaping. I have never had trouble with doing them like this.

I know some put in eggs, breadcrumbs, but I don't.

Oh I would absolutely say so Kate. Maybe some chopped herbs, bit of garlic . . . Experiment!

Of course, chop the onions and garlic very fine.

Making me hungry now! I've never attempted meatballs but I might give it a go now!
As I am 1/2 Italian...the basil and oregano are a definite in mine, as are breadcrumbs and egg (they keep it moist),tomato puree,and even some parmesan.
If I really want to go crazy-I put a lump of mozzarella in each one.
......and don't forget the garlic and onions.!!!!
Get the mince of your choice, add seasoning, fresh herbs, breadcrumbs and an egg white to help bind it all together.
If the mixture is too wet, add more breadcrumbs. Garlic and onion, finely chopped, gives them that extra dimension.
I put tomato puree in too, adds a tangy taste!
I made some lovely lamb koftas the other day.

Minced Lamb, squeeze of lemon, fresh coriander, chopped onion and garlic, chilli powder, ground cumin, black pepper and natural yoghurt. This recipe works well with turkey mince, too, if you are watching the calories. They are fab when served in a toasted pitta with mint/yoghurt sauce.

thank you so much,i know how to make them but since i got this brain tumour, my memory doesnt function like it should and i have to see things in black and white and basically just take my time,it takes me ages to do anything hence this is cooking day,and i'm using some of your hints.

bloody hell,i put the mince in the freezer ,so i'll leave that for another day.
Oops that's the kind of thing I do! IT can wait - you might have even more ideas by the time you do it!
