we have a pound of chestnuts. what do we do with them?

If you're lucky, you roast them in the ashes of an open fire. You can also cook them in an oven, but you have to prick the shells first, or they might explode. Chestnuts also make nice stuffing, but it can be dry, so it's best to add some fruit.
Make a rissotto, make a souffle, make a tart, make stuffing - add fruit, other nuts, sausage meat - game, beef, pork etc - make a pate, make chestnut balls, make a dessert cream with added chocolate, make a cake filling of chestnut cream, make into a pie with winter veg., add to polenta, couscous or rice, add to soup with seafood, make a puree with potatoes, make into a torte with almonds, add to gratin veg like a cauliflower cheese, make a dessert with cointreau syrup, add to biscotti, make sweet biscuits, use in broths, add to chinese style stir fries, add to a mushrom medley for a winter stir fry, serve as a side with aduki beans, green beans or spinach, add to casseroles for texture and protein boost, make into a filling for stuffing peppers, mushrooms or ,if life is not too short, stuff cherry tomatoes and serve as canapes........

You'll find recipes for these sort of things easily enough......or just thread them onto some string and make pretty room decorations............
boil them, peel them and eat them dipped in salt - yum!
