Ooh hi Linz! Why do you run of ideas? Do you mean that by the time you get home you can't be bothered to think of anything or do you mean you can't be bothered to make anything? I try and go to the shops and get lots of yummy stuff on a saturday or a sunday (or a monday if i want to avoid the queues), that way you have lots of yummy stuff in the fridge ahead for the week. If you can't be bothered to make stuff just get stuff that's zappable - that's what ido when i get in from the gym. If it's new recipes or something why not try something easy like the river cafe books or jamie oliver or something and that might inspire you - or cut out things from magazines, one of my favourites is a tuna pasta recipe from the daily mail *cringes* and it's so quick and easy! my favourites are waitrose thai green curry, tuna pasta, anything from M&S, sainsbury's mini pizzas, and fish fingers. although not all together obv!!

Thanks all!! And in answer to your question Becks, it is more of a case of I don't know what to make when I get home, I don't finish work until 6:30 so I can't be bothered spending ages in the kitchen! :-)
Do you have time to have a cooking session once every couple of weeks? You could make pasta sauce, soups, etc etc and freeze in individual portions. Then take out of freezer in morning or defrost in microwave. Plenty easy recipes could pass on to you (via the yahoo group - answerbook - is an option). It's a good way of making sure you eat decently and quickly.
A fast and delicious recipe from a lazy, impatient, incompetent in the kitchen (me :)

Couscous with grilled vegetables and feta cheese -

dice an onion, peppers, mushrooms, tomatoes and lots of garlic and spread them out on a baking tray --- sprinkle with olive oil, balsamic vinegar, salt and oregano --- place under the grill for 10 to 15 minutes --- put some dry couscous in a bowl (optional: add an oxo cube) --- pour boiling water so that it just covers the couscous (it will take about a minute for the couscous to swell with the water) --- take out the veggies and add to the prepared couscous, not forgetting the juice in the tray --- mix and top with crumbled feta cheese.

You sound like me! Want something quick as you can't be bothered. Eat chicken? Then how about this:-

Chicken chargrills (made by that very famous frozen food manufacturer) Pop 'em in the oven on baking tray/ baking sheet.

A bag of vegetables that you steam in the microwave (this means sling it in micro and press the buttons) - no measuring or faffing about! Thay are also made by that very famous frozen food manufacturer.

And finally Boil in the bag rice/ microwave in the bag rice, or follow instructions for cous-cous  - do it on the hob AND I promise you it's much easier to cook than I ever imagined.

Hope you enjoy!

Carol

PS I'm going to try recipe by other person - grilled veggies, cous cous & fetta cheese - How about you?
