vegetable curry recipe

hi does anyone have an easy veg curry recipe(i like the one sold by tesco0

Ingredients:

onions
carrots
brocolli
courgettes
aubergine
spinach
potatoes
fresh chillies
fresh ginger
fresh garlic
fresh coriander
cumin powder
coriander powder
curry powder
chilli powder
cayenne powder
garam masala
tinned tomatos
tinned coconut milk

Fry off some onions, carrots, brocolli, courgettes, aubergine and potatos.....
Whilst frying these veggies, add a desertspoon of cumin, and coriander, some fresh ginger, some fresh chillies finely chopped ... with or without seeds,and some fresh garlic. A good 2 tsp of chilli powder and a good 2 tsp of curry powder. That would be mild or medium or hot depending on how you like your curry, and a sprinkle of cayenne.

Keep stiring as you are frying, and add a tin of tomatoes and a tin of coconut milk if you like it creamy. Add a desert spoon of Garam Masala and add spinach and let that wilt in as you stir.

Let it cook until veggies are soft. Add fresh chopped coriander and serve with rice.

You can add coriander seeds and saffron whilst cooking the rice if you like :-)

This is just a veggie curry and you can put any veg you like in really.... including a tin of chick peas :-)

My fave - lightly fry some sliced onion with garlic, add a decent curry paste like Mae Ploy brands Penang style or similar, stir in coconut milk allow to reduce, add more coconut milk (not so its a soup but enough to cover the veg) and add diced potato. Cook gently for 5 mins, add sliced green beans, some cashew nuts, chick peas, spinach - frozen or fresh - and a little veg stock. Season. Cook for another 10 mins, add some diced tomato and cook another 2 mins and serve hot with nan or rice.

You can add extra chili, other veg, some prawns or TVP, extra flavour like coriander, etc etc to the above basic. Use different pastes for various results, or use sweet potato or yam in place of the potato.....
