Has anyone got a recipe for an easy to make vegetable curry. Ta.

Parragon books have an Indian Cooking title in their "The Complete Book of" (various world cuisines) series which has lots of veggie dishes. I`ve picked several up cheaply in discount bookstores, or look on Amazon. A very quick & easy one is to use is Schwartzs Bombay potato packet mix. If you`re not a vegan, hard boiled eggs are useful as well.
If I have left overs from a roast dinner I use it up the next day by frying it using either some Pataks curry paste or a jar of curry sauce. Hey presto a quick veg curry! Serve with paratha's.
4 oz butter or vegetable oil
1 lb onions, peeled and sliced
3 cloves of garlic, peeled and finely chopped
1" chunk of fresh ginger, peeled and finely chopped
1 tsp chilli powder
2 tsp cumin seed
2 tsp paprika
� tsp turmeric
2 tsp salt
4 heaped tbsp tomato puree
1� lb mixed vegetables (eg cubed potatoes, sliced carrots, halved button mushrooms, cubed sweet potato etc etc)

Heat the butter/oil and gently fry the onions for at least 10 minutes. Add the spices, garlic, ginger and salt and fry for a further minute, then stir in the tomato puree. Add about half a pint of water, stir well then simmer the sauce until it thickens up (10 - 15 mins). Add the raw potato and any other hard veg and fry them gently in the sauce for about 10 min, then add the softer vegetables, fry for a couple of minutes, add enough water to give you a thick sauce and simmer until the vegetables are cooked. (If your vegetables are already cooked, like Josie mentions, just reduce the cooking time).
