I can't believe no-one answered you - I only logged on today! You've most likely had your steaks by now.

Well on the TV shows they always add Salt & Pepper while they are cooking in the pan (think Ainsley with Suzy Salt etc) but you can choose to add before or after, I suppose it should be to your own preference.

I always braise mine in gravy so I can't say I would be the best person to advise - good luck anyway
People say that adding salt draws the moisture out and makes it dry but to be honest, cooking it "well done" will make it dry. If you are having your steaks rare to medium then do it before as it takes on a better flavour. Don't use too much salt though, pepper is better. If you like your steak well done (like burgers in other words ;-) ) then season afterwards.
