Does anyone have any recipes for healthy salad dressings?

Oil free ones - Try this - mix some shredded dill, tarragon and garlic with very finely chopped cucumber and dijon mustard in a little cider wine vinegar. Stir in some low fat yoghurt and season. Allow to stand a little before serving. Chunky style and nice and fresh.

Or: Low fat yoghurt, crushed garlic, dill or coriander and a small grated cucumber. Mix well and dress salad.

Or: chopped ginger root, grapefruit juice, and white wine vinegar blended. When you want to serve, strain the juices and add some light oilve oil to make the dressing. (goes nicely with steamed fish by the way)

Or: 2 or 3 small and very fresh, sweet tomato, dash of white wine vinegar, little dijon mustard, salt, pepper, and some basil and thyme - ffresh is best. Blend and dress salad leaves.

any dressing you want with oil - use the light oilve oil for a healthier option.
