Is it possible or advisable to reheat leftover risotto?

Personal opinion this, but unless you are 110% sure that it was kept really cold immediately after use and not standing around on the table for ages, Then I would chuck it out, but then I have just had diarhrea for three days from eating ''leftovers'' which I knew was not a good idea but someone insisted it was OK to eat.
i recently had leftover risotto, but it was the next day i had it and at lunchtime, i probably wouldnt go any later than that, but then again i have a 'thing' about things like that!

Risotto doesn't really lend itself to reheating - especially if it's "proper" risotto made the traditional way.


But, as qapmoc says, as long as it has been cooled quickly and refrigerated immediately, then it's only the flavour that will suffer.

As long as it was refrigerated after it had cooled to room temp then no problem.
Also meant to say that the reheating should making it piping hot. Stir and reheat until every grain of rice is steaming.

Thanks for the advice, peeps. If I do reheat risotto should I add a little more liquid to the pot or will this spoil the texture? Hob or microwave?
Subject to the conditions generally agreed above, there shouldn't be any problem; I've used leftover risotto to stuff peppers or tomatoes many times. BUT I wouldn't risk it if it's a prawn risotto - any surplus of that goes in the bin.
You could use it to make little balls, stuffed with mozarella. Roll them in breadcrumbs and fry - they're a great buffet food.

I've eaten leftovers before though and I've been fine - but vegetarian only; don't risk it with meat or fish.

I often cook twice the amount that I need when cooking something like rissotto as I find that by re-heating in a microwave works fine. Put it on the plate that you're going to eat from and cover with a plate cover.I got one from a kitchen ware shop for about �1. Make sure it is covered though or you'll have exploding rice all over the inside of the microwave. Cook on maximum for about 4 mins (800w) or 5 mins (650w). you shouldn't need to add any extra liquid as the cover will retain the moisture. Be aware that the plate will be very hot! ..... happy eating

I cant see / dont really understand the problem. Assuming it doesnt have meat that was on the turn in it, hasnt been left out for ages in a dodgy environment etc there's no problem. Add some water to the saucepan to help the consistency and make sure it's hot though. Add some chopped herbs and lightly season it again to revitalize the flavours. If you've added cream previously then dont boil it as it might split and you'll get a cream volcano!


I regularly eat food that i've left on the stove overnight and there's no problem. If you've got a week imune system then you shouldnt.

I always make too much risotto, so that the next day I can make risotto patties!They are nearly more delicious than risotto is! Just make sure that it has been kept in the fridge, get it out, shape it into little patty shapes and fry them in a little olive oil until they are all golden and crispy on the outside and all hot and runny inside. I like them with a crispy salad with a lemon dressing. Delicious!
