Have you made cheesecake? Is it very different from shop bought? I quite fancy having a go

i tried once, but never again. shop bought can be nice.
I think I found it easy, and I’m not a baker of any reasonably standard.
Very easy
I've made it loads of times and been asked to make it for parties as well.

Any suggestions as to filling? Also, which is the best cheese to use - Philadelphia or mask a pony?
BAILEY’S CHEESE CAKE

Base 250g crushed digestive biscuits & 125g melted butter

Topping 330g cream cheese
mix in slowly 200ml Bailey’s then
stir in 50g melted plain chocolate and
½ pint of whisked double cream.
Pour over base and chill.
Can be topped with grated chocolate

That sounds good, bhg. I will only be able to have a little tiny nibble as I'm diabetic but I'm sure the family would enjoy it
Barry,I too am diabetic and lemon cheesecake is good, use Nairns - they're the biscuits I use, sugar free digestive or the ginger ones, they give a great kick - baileys cheesecake is over-rated in my opinion. use xylitol as a sweetener (if you have a dog though, do not share with the dog or give it as treat - xylitol is toxic for dogs)
Use 100gm digestive biscuits, the nairns if you decide on them
50gm melted butter
Tub light creme fraiche or sometimes I go for greek yogurt (150gm)
180gm light cream cheese (philidelphia)
Lemon - juiced and zest
xylitol or sweetener of choice, as you are mixing it, just keep testing if it is sweet enough to your liking

To make up the cheesecake,
put the buttered biscuit mix into cheesecake tin or ramekins if you are gonna serve it seperately to family
Mix the cream topping and squeeze of lemon juice
place on the biscuit mix and let chill
Decorate with lemon curd if you have some or candied lemon pieces - you don;t have to eat them
It's a nice cheesecake for everyone, even diabetics
The best in my opinion is classic lemon and vanilla. On the odd occasion I'd add either choc drops or sultanas.

I put lemon curd as a topping on the last one I made.
I use Philly and ricotta or mask a pony, lol

You're welcome Barry, I just think if you make it, be a shame you cannot enjoy it yourself :)
Instead of xylitol, use erythritol. A bit closer to sugar...and not as likely to cause digestive issues. Get powdered, not granulated.
Unless you’re going to eat half the cheesecake in one go, use sugar. The amount in a serving won’t have much impact on your blood sugars, and all the health professionals recommend not using any kind of sweetener in cooking.
Pasta, I do actually use the granulated canderel but started making this with the xylitol - I prefer not use sugar vagus is my baking or cooking
Ok ducksie. We all do what we feel is best.
We were told to try and avoid artificial sweeteners in cooking.
Health professionals differ, I follow mine and have maintained my bsl readings to a point that I am almost in remission of diabetes - I prefer keep away from the sugar, my diabetic nurse and endocrnolgist are so pleased with my progress - I stick, therefore with the sweeteners
