We have friends coming for a meal shortly and I thought I would cook chicken as my friends are not very adventurous with food.  Has anyone got any suggestions with chicken instead of the usual boring roast chicken, potatoes and two veg.  Thanks.

chicken casserole or chicken pie? Fajitas are always a hit with my friends and lots of sour cream for the lightweights
How about coq au vin - a bit foreign, but not too adventurous!
Here's the recipe I use:
4 chicken quarters
200g (7 oz) smoked streaky bacon, thinly sliced
16 shallots, peeled
250g (9oz) button mushrooms
1 clove garlic, crushed
400ml (14 fl oz) red wine
few sprigs fresh thyme
15ml (1 tbsp) fresh parsley, finely chopped
60ml (4 tbsp) seasoned flour
30ml (2 tbsp) olive oil

1. Pre heat oven to 180 degrees C, 350 degrees F, Gas Mark 4. Toss the chicken in the season flour. Heat the olive oil in a large heavy-based frying pan and fry the chicken, turning often until evenly browned. Place in a large-lidded ovenproof casserole.

2. Add the bacon, shallots, muchrooms and garlic to the frying pan, cook until lightly browned, add any remaining season flour, stir.

3. Add the wine and stir, bringing to the boil. Pour over the chicken quarters, add the herbs. Cover and cook in hte oven for approximately 1 hour 15 minutes.

Serve with jacket or new potatoes and green beans - delicious.

Creamy chicken

I Chicken breast per person, cut into cubes
1 red and one green pepper, diced in 1 inch dice
Button mushrooms - cut in half
1 onion, diced
tub of soured cream
knob of butter.

Fry the onion and peppers in the butter until the onion is transparent but not browned. Add the chicken and stir fry until the chicken is cooked. Add the mushrooms and soured cream, and simmer for a few minutes until the mushrooms are warmed through but not soggy. Season with salt and freshly ground black pepper.

Garnish with fresh chopped parsley, and serve with rice, pasta or mashed potatoes.

skin some chicken breasts and slit diagonally, taking care not to cut right through.

Stuff with chopped mushrooms,chopped sage and garlic ( or use a good pate)

Wrap each breast in pancetta slices.

Put in shallow tin/dish, cover with foil and roast for half an hour.

Remove foil and brown in oven for a further 30mins until pancetta is crispy.

serve with new potatoes, brocolli and mushroom sauce - delicious!
