Just put my two sponge cakes in the oven to bake for a charity bake thing at work tomorrow. Not baked anything for years (used to do loads) and a bit out of practice...errr my flour I found in the cupboard expired in 2008!

Praying it turns out ok, at least edible and worthy of buying for charity (not expected to be in the prize winning haha!).

Went for simple and thanks to everyone who helped on my earlier thread - hoping I'll get the baking bug back to make more stuff.

Am leaving the buttercream making until I see how the sponges turn out!

Gateful to anyone who can keep their fingers crossed for me :)

If all else fails, scoffing the left over cake mix was worth it, oooh I've missed that!

1. Announce to AB you are cooking Victoria Sponge Cake
2. Get the recipe or ask ABers (allow 20 mins for Vodka and Eccles to respond)
3. Prepare the following ingredients:

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk


100g butter , softened
140g icing sugar ,...

Thank you :) Ahh I had a cunning plan...bought some of those cake paper liners so hoping that it makes it easier to get them out! Bit worried they will end up a funny shape because of them though!

Sooo want to go have a de-stressing ciggie but don't want to risk banging the door and the cakes going flat haha...argh!

Well, they rose!!!!!!! (in the middle...oops!)

They are kinda abstract Yorkshire pudding looking and are a bit of a funny shape round the edge where the paper thingys were....


Oh dear....

(May need a rescue plan!) HELP!!!!!
1. Announce to AB you are cooking Victoria Sponge Cake
2. Get the recipe or ask ABers (allow 20 mins for Vodka and Eccles to respond)
3. Prepare the following ingredients:

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk


100g butter , softened
140g icing sugar , sifted
drop vanilla extract (optional)
340g jar good-quality strawberry jam ( we used Tiptree Little Scarlet)
icing sugar , to decorate
And send 6 AB messages to other threads.

4. Ask an ABer how to turn your oven on and set the temp - wait 15 minutes for FGT to respond

5. Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.

6. Send a message Now What. Wait 15 mins for NoM.

7. Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed.

8. Message excelsior and cazzz and wait for replies, ask maid up if she has a timer.

9. Turn onto a cooling rack and leave to cool completely.

10. Go Phew and report onto AB.

11. Ask about the filling. Wait for Tony and DTC to respond (30 mins)

12. To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar.

13. "Now what?" Mamya advises after ten minutes, also passes on Sqad Ibuprofen advice if you have burnt your fingers on stage 9.

14. Beat in vanilla extract if you're using it. (Having asked sibton if you can borrow some).

15. Spreading, like marval's waistline: Take AB advice:

16 Spread the butter cream over the bottom of one of the sponges, top it with jam and sandwich the second sponge on top.

17. Ask Pixie if you can Dust with a little icing sugar before serving.

18. Keep in an airtight container and eat within 2 days.

19. Remember to invite all on your thread to partake of your baking.

20. Pour yourself a stiff G & T and go "Phew"....

21, Remember to e-mail BOO after the cake has been eaten.

Not in the middle, round the edges even....it's all going a bit wrong!

Glad I have a self deprecating sense of humour and I won't be living up to anything!
Butter Icing will cover it
even up with a sharp knife if rough edges....

Haha, DT that's brilliant, I love it! :)

At least I have some of the "before" photos on FB which make it look more promising! Not sure if I will be adding an after picture...purely in the spirit of the competition of course ;) ;)

Yes, think I need to go with smaller is more beautiful...and the more buttercream the butter, just hope I can make the marg I have left make more than I anticipated!

Maybe I should just use one and go for camoflage!

Think I could use the ibuprofen though...sqaaaaaaaaaad!
