ANY SUGGESTIONS FOR A STARTER

We are having friends round to stay for the weekend, I am cooking beef for the main course, has anyone any suggestions for a good starter, they don't like shell fish.

Quails eggs and crispy bacon flakes in a nest of crisp lettuce. Season and dress to taste.
Pear and blue cheese salad with walnuts. Pears can be fresh, griddled or poached, served with a lemon and walnut oil dressing.

Beetroot and goats cheese salad with a chive dressing

Parsnips roasted with a sherry vinegar glaze served with rocket and a sultana and walnut dressing.

Braised leeks with a caper and shallot vinaigrette.

Mozzarella and rocket wrapped in prosciutto with a balsamic vinegar to dip.

I'll keep thinking.....
1. On a bed of mixed salad leaves add halved cherry tomatoes and some crumbled feta cheese, drizzle with a lemon vinaigrette

2. Fry some mushrooms of choice (mixed wild, button or cut up field, etc) in some garlic butter, add some frizzled smoked bacon lardons on a bed of leaves, pour over pan juices and serve with crusty bread

3. Spring veg soup: dice a selection of baby veg (you can often buy mixed packs, like fine green beans, & baby corn) a small carrot, and a small courgette, a couple of spoonsful of petit pois peas, and a bunch of prepared spring onions, and a clove of crushed garlic if liked, sweat in a little butter, add chicken or vegetable stock, some fresh soft thyme leaves and some snipped chives. Serve with warm rolls

Ist and 3rd starters have the beauty of being able to prepare well in advance
Asparagus wrapped in Parma ham with poached egg.
Deep fried breaded brie with cranberry sauce

or

Whitebait
Portabelo mushrooms with a cheese filling and crust.
I'd happily make a meal of all these starters... ;-))...never mind the beef.
