You can't.
Or at least you shouldn't be able to. Some lenders aren't too fussy these days.
deeds are irrelevant.

You may be able to add your partner to the land registry entry if the lender agrees but they probably won't unless he also takes joint responsibility for the mortgage. They may allow it if there is sufficient equity.
loosehead is wrong: one can be a joint owner but indemnified against mortgage, or - conversely - a borrower without being a mortgagor (or vice-versa).
