I reckon it's sight. The eye is sensitive enough to detect one photon of light.

Touch, i'd think but its hard to say which is the most sensitive.

i think it's different 4 everyone. obviously blind people's sight is much less sensitive and deaf people's hearing is much less sensitive, but i think in many people if one sense is impaired the others can be heightened.
