I've just made a bowl of this to have with cold chicken and a few home made chips tonight. I use white cabbage, grated carrot and grated onion, covered in mayo. Does anyone have any additions they use to perk it up a bit?
I also made a bowl of pineapple salsa, totally scrumptious.
Well BOO, I'd love to put garlic in it but himself would barf.
Pineapple salsa recipe given to me by a friend who is a really good cook:
Half a pineapple (I used a tin in natural juice)
Half a red onion (more if you like it more oniony)
Half a chilli
1 large tomato
Tablespoon of fresh coriander
Juice of a lime (I used some squirty lime juice)
Chop it all up as small as you would for a salsa, put in bowl, add lime juice.
If I'm making a quality where there are unlikely to be any leftovers I'll sometimes add some Julienned Apple tossed in lemon juice (not girated though as it is too wet) along with a handful of crumbled walnuts for some bite. I generally prefer to use red cabbage as it is more colourful.
I totally overlooked your salad cream suggestion Ummm, you reminded me I usually put a bit in too, thanks :) Not too keen on grated cheese in it, don't think it adds much flavour.
I'll be sure not to put any girated apples in Eccles ;)
Like EC I was going to say chopped apple and also celery if you can find a tender non-stringy one these days.
I do like my coleslaw.....
I also put curry powder in mayo and use it for dipping crudité. Just dollop as much mayo as you want in a bowl and then add small amounts of the curry powder you like and mix well until it reaches the concentration you want. Scrummy with raw cauli florets, carrot batons and all the usual crudités.
