I always make a tasty creamy sauce with prawns/shrimp for a seafood flavour:

For 3 servings:

Fry 1 shallot in some butter until golden. Add 30ml double cream, a teaspoon of vegetable bouillon powder, a tablespoon of white wine and pepper to a small pan - simmer until the cream thickens. Drain 250g small prawns/shrimp and add to the sauce at the last minute, heat slightly. Perfect on top of the salmon!

This recipe is good to bulk up a small piece of salmon.

Hope you try it!

Try dill, pernod and cream.

Fry off the salmon in oil/butter then deglaze the pan with a "jigger" of pernod. Burn off the alcohol then pour in the cream and a couple of tablespoons of chopped dill. Reduce to desired thickness. A big pot of double cream will serve four.

Probably not what you were thinking of, but I recently used some salmon fillet pieces in a tomato / coconut / coriander-based curry, and it turned out pretty well...
You could steam it with a bit of ginger and serve with pesto pasta or marinade in teriyaki sauce & serve with rice & stirfried veg YUM!
I like a lemon sauce with my salmon.
