Why does loin sound posher than fillets...which you can get anywhere...?
That's how they climb the salmon ladders.

Yes....but they tend to get stuck between a rock and a hard plaice, DT.....x

When I saw the salmon ladder on the Columbia River in Oregon, I was astounded at the size of the salmon swimming by. None of them had legs, though.
