Phase change
Are you looking for 'freezing' and 'melting'?
Or you could use 'solidifying' and 'liquifying'.

Actually, Estie is more correct in answering the question as posed. Phase change is a more general description. Estie has answered both parts of the question accurately.

Solid to liquid is known as "the runs", whilst the reverse, liquid to solid is known as "Immodium".
