I want to bake a fat free cake, what can I use instead of the vegetable oil? It has to be vegan.

What sort of a cake? I have a recipe for a fruit loaf.

Here's a recipe, someone at work made it, it's called Dad's Healthy Cake !


4oz All Bran


3oz sugar


10oz mixed dried fruit


10 fl oz skimmed milk


Mix the above together and allow to soak for 30 mins


Then add


4oz SR flour


Line a 2lb loaf tin with baking parchment , cook at 180 degrees celsius for one hour.


This is really tasty and keeps well. It also works with one egg added with the flour but this isnt necessary

why not bake a plain old sponge cake,


whisk 3 eggs and their weight in sugar add the eggs weight in flour, few drops of vanila essence. Include 1 tblsp of cocoa in the flour weight for a choccy sponge.

so sorry i forgot to get back to you - my recipe is similar to alibobs, but you use a mugful of each ingredient - flour, sugar,dried fruit,oats and skimmed or soya milk. mix well and bake in a loaf tin for about an hour at 170/180
i am vegan and i use applesauce or banana to replace the fat and eggs. sometimes i add vinegar. it comes out fine all the time.
