Does anyone know the authentic recipe with spaghetti, garlic, two egg yokes. Mixing it together once cooked? Is this the right recipe. Someone once told me about it and I would love to cook it but need the right recipe.

Combine the flavours on the cooked pasta, and try with duck eggs for a better egg flavour - all ducks are free range as they won't stand being caged like hens, so don't bother with the cheapest hens eggs.


Use smoked garlic for a change - there are lots of different varieites of garlic grown in the UK.

Their garlic is a specific variety that is without the bitter after taste you can get with some, and should suit the plainess of the sauce. The addition of egg yolks is also prevalent in a carbonara dish - reduce cream in a pan with a little garlic (and crispy bacon if wanted) then toss your pasta through this. Break the egg yolks into the pasta and toss just before serving. The eggs and parmesan cause the sauce to stick to the pasta better.
