i would serve roasted vegetables, like sweet potato, butternut squash, courgettes and red onion, chop all the ingredients up and drizle with a little oil, pop into the oven for about 45 minutes. or alternatively buy a pack of this in the chiller at tesco, all you have to do is pop it in the oven, no chopping and peeling. it makes a lovely addition to any meal.
cut your vegetables in all sorts of stirfry shapes, and there are many. use lots of colour. zest skin of an orange or two, pour boiling water over zest to soften. ginger and garlic. either quick fry or steam. if frying add a teaspoon brown sugar to caramelise. the contrast between bitter raspberry sauce and the orange flavoured veg is refreshing.
