I don't mean those marachino ones for cocktails - They're available in Aldi or Lidl sometimes, and are called 'sour red cherries'

Tip off clear almond flavoured water (can be saved to use in cakes/biscuits, use in a week, keep in fridge)
put cherries in a saucepan and add either half a jar of cherry jam and a slug of Kirsch or cherry brandy, or half a jar of dark orange marmalade and a slug of orange liqueur, eg: mandarin Napoleon, Triple sec, cointreau etc, and cook through till hot but don't boil off the alcohol. Makes a delicious sauce for duck
(You could of course use the orange liqueur in with the cherry jam too!)

Tried the all cherry one last night on a couple of crispy roasted duck breasts - it was delicious!
