How do the players work out so quickly what to go for , when they reach a checking out amount , especially when they miss what they are going for and have to adjust ? ( if you see what I mean )

Do they have some sort of assistance ?

Experience.
Practice, practice and more practice, Baz, and I suspect a helping hand from the scorers if they are stuck
The scorer can only tell the player what is left, not what a possible out shot is.( eg, 151, not treble 20, treble 17, double 20)

Has there been a 9 dart check out in a televised competition ?
Many first was John Lowe many years ago there was 2 in the BDO this year
plenty e.g. there were at least a couple at the recent world championship shown on sky

with experience the players know their favoured check out and
also every recovery checkout on the way down. It's like chess openings, players just know from repetition. Of course they are also excellent mental arithmeticians. When I played I always liked to leave myself 32.

Yes - and have to be 'quick ' at mental arithmetic .
It's the speediness of the mental arithmetic , which is impressive me ; when they have to change what to go for , when a dart goes into the unintended number - for when they they return
