How do you serve sole without the bones - and without making a mess?

It's quite tricky. The way I do it is to hold the fish steady and cut away the fins on each side. Then cut along the length of the backbone and carefully nudge the upper fillets off either side of the bone. Then peel the backbone from the lower fillets and you're done.
