My daughter and her boyfriend are going on holiday and have asked me to pay for it and they will pay me before they go. Is this possible for me to use my credit/debit card and not be named on the holiday booking. Any help would be very much appreciated.

Yes you can pay for it. It normally gives you a box to tick if you are not a named traveller if you are doing it online.
There are thousands of holiday companies and they will all have their own individual terms and conditions for bookings, so the only people that can answer this is the people you are wanting to book with.
Yes certainly, why not? The holiday people won't mind whose name is on the card as long as they get payment. I buy things for OH on my card delivered to him, we have different names, nobody ever queries it.
^^ although the above answers are probably better, in your situation.
I did exactly the same for my daughter. She is travelling with Easyjet and I'm not named on her booking.
Booked flights in the past on the internet which have clearly stated that the person whose credit card was used for the booking must be one of the travellers and this card maybe required at the airport.
There might be an additional charge for paying by credit card - worth checking first.
