i consider myself quite a good cook 'but'dont ask me to make cheese sauce or pankakes,a disaster every time,what doesnt turn out right for you?????

slinky - use megs method until it is still quite thick then add chicken stock until it just coats the back of the spoon and then chuck in enough cheese to thicken it :o) Using stock makes it far easier to judge the consistency and makes it taste delicious too.
I seem to do ok mostly!....love to cook, my cupcakes go down a storm!......love to make them!..and generally my cooking is tasty!.....
