I am making a christmas cake for someone whose child has a severe nut allergy. Is there an alternative to marzipan I can use for covering the cake before icing?

MOCK MARZIPAN

Ingredients:
2 ounces margarine
2 tablespoons water
2-3 teaspoons of almond essence
4 ounces sugar or golden syrup
4 ounces soya flour
Method:

1. Melt marg. in the water, add essence and sugar or syrup, then soya flour.
2. Turn on to a board and knead well.
3. Roll out; cut to a circular shape with the tin the cake was baked in.
4. Smear the top of the cake with jam then cover with marzipan.
5. The cake can be topped then with icing


You have to make sure the almond flavouring is artificial, otherwise use vanilla or something.
shaney star.... if this person has a nut allergy, are they really supposed to use the almond essence!!!!!!!!!!!!!!!!!!
I have said in my post that you can use vanilla essence, as a substitute.
