I`m just cooking some pork loin chops and I`m going to do a garlicy, creamy mushroom topping for them. I would like to put a bit of white wine or sherry in the sauce but I don`t have any. Which would be better in the sauce, brandy or Chinese white wine?

Sorry, I meant Chinese rice wine
either would work great, but i'd probably go for the brandy.
I would go brandy.....tad of grain mustard as well perhaps....
Rice wine, and a little soy sauce.

I`ll do that then. The mustard is a good idea too but I only have Dijon
