I have a Nokia 6230i on Orange (for work) and a Nokia N95 on Vodafone (for personal use) ...... can I get a blue tooth earpiece that will work with both? How do these earpieces work exactly?

Yes. You can pair quality earpieces with more than one phone.
My motorola H15 has multipoint to connect with two phones at the same time.
