raspberries

id forgotten that i had a whole pack of raspberries left in the fridge that i bought on friday, any ideas what i can do with them? not into pavlova much and hubby doesnt like raspberries much for dessert anyway. we go on holiday on wed so thought about freezing them in some way other than just fresh.

so how do you make raspberry coulis then?

Smoothies seem to be the best option-adding them frozen makes the smoothie cool and refreshing! so good!

sprinkle them on cereal or yoghurt for breakfast - frozen or fresh. if you're going away, freeze them now and decide what to do with them when you get back!

Make a sponge - 8oz each of flour, sugar, soft marg [stork] 1tsp baking powder and 4 large eggs. Beat the eggs, add all the other ingredients and mix. Put into an oblong tin
about an inch deep, scatter the raspberries and then scatter flaked almonds on top, bake at 180 till cooked, about 30 -35 mins. cut into squares when cold. Don't wait too long to eat them all up [or the raspberries go mouldy!!] All my family love them.

Forgot to say, you only need about 20 or so raspberries spaced on top - lol.
Crush them and mix them with some creme fraiche and a bit of sugar to make a posset and freeze then pop in the fridge for defrost when you come back.

You could also put them on a biscuit base to make little mini cheesecake type desserts.
