anyone have a recipe for puff candy plz

Haven't done this for ages so you will have to experiment with quantities. Gently melt sugar in a pan (adding a little water helps) and then stir in some bicarbonate of soda. Pour it into aluminium foil containers, cool and enjoy. Not much help but good luck.
Meant to add that in my part of the world we called it Cinder Toffee.
I remember making this as a child.........roughly it was a richer toffee mixture than the previous answer, made with butter, golden syrup and sugar and when it reaches setting point , add bicarb of soda, watch it puff up and then pour quickly onto a tray.Leave to set.

according to Nigella Lawson:

mix 200g caster sugar with 4 tablespoons golden syrup in a heavy bottomed saucepan, then put over a med to low flame and let simmer for 3 - 4 mins. it's ready when the mixture is a thick bubbly mass, the colour of "rusty caramel" and no darker.

take off the heat and quickly whisk in 1 tablespoon of bicarbonate of soda watch it foam up and pour into a well buttered 20cm square tin.

Leave to set - takes a few hours. she says it can be cut but best to be bashed into splintered pieces. She also suggests dipping the pieces in melted chocolate or stirring into ice cream.

I haven't tried this recipe myself but I haven't found a nigella recipe yet that doesn't deliver! good luck!
