Hollandaise sauce is wonderful and creamy, especially nice with salmon or asparagus.  It's got a yellowy colour and has vinegar and eggs in it.  I don't think it is easy to make as the eggs curdle easy.  I would definitely recommend a jar of Sainsburys own brand, you can usually find it above the freezers with mint sauce, mustard etc.
I think it's a bit like thin mayonnaise, but served hot. Very good with strong fish.
Delia Smith has the best recipe for hollandaise which doesnt curdle made in a blender- have tried it lots of times and is dead easy.  Dont have her books with me, but the recipe is for small baked potatoes with the sauce if you want to look it up...
