What exactly goes into a sausage?(where abouts on the pig)

If the sausage is made with a synthetic casing,the rest of the material is scraps from all over the pig.  Some people still use natural casing to hold the sausage.  This is cleaned and soaked entrails... bon appetite!
I used to know a butcher & you wouldn't want to know what goes into some sausages, or indeed minced meat! Sorry to put you off!

Everything but the sqeak!   And as Dickens (I think) said, all the parts that the pig was least proud of in his life ...
anything goes into your normal run-of the mill sausage. I recommend getting your more expensive supermarket 'finest' range of sausage. they actually taste great and don't have half the amount of rubbish in them!
