A simple, low fat if possible, sauce that can be eaten with salmon and pasta.

I like half fat Creme Fraiche as the main ingredient as it doesn't curdle (very important as I'm easily distracted!).

Then add anything of your choice eg. splash of white wine, sauted chopped shallots, sliced baby leeks or sliced mushrooms. Finish with grated rind of lime or lemon, plenty of dill or parsley and seasoning.

How about chopped fresh tomatoes, chopped kalamata olives, capers, and fresh basil cooked for 10 min or so on the stove.  Serve with lots of parmesan!
make your own white sauce up with skimmed milk and use cornflour to thicken it you can add whatever herbs or seasonings you like then...mullein
When cooking salmon I almost always just use store-bought balsamic vinaigrette salad dressing -- apply before putting in the oven or on the grill.
My other choice is to mix the following powdered spices into lemon juice: cardamom, cinnamon, nutmeg, paprika (about equal parts). Gives a nice middle eastern fragrant flair.
