lid on/off?

Some recipes for e.g. soups, jams etc. say boil/simmer with the lid on , others will say with the lid off the pot, and some will have a bit of both.
What is the reasoning or does it matter?

Hi,
putting a lid on a saucepan will retain heat so you don't need to use as much energy to cook and retain moisture which may be important depending on the recipie.
IF you have the lid off, it reduces the qauntity normally, especially if it is stock etc.
