I'm looking for a new recipe for fresh Cranberry Sauce. Any ideas?

Hello! One I've used, is to rinse cranberries, check that they are sound. Place in a microwaveable bowl with approximately 3Tbs of orange juice, fresh or from a carton, add a little sugar to taste and cook to soften,about 4 -5 mins. Depending on the juiciness of the cranberries, you may need to add a little more juice and adjust your cooking time. Stir well and check for flavour adding a little more sugar if you choose. Should the mixture be too stiff add more orange juice. Enjoy and Happy Christmas

We do one pound of frozen cranberries (one bag, here) and one medium size navel orange. Cut the orange into quarters and remove all the seeds. Cut the ends off the orange to remove any hard stem ends. Place cranberries, (sightly thawed) orange quarters, (yes, peel and all) and 1 cup of sugar in food processor. Process, just until well blended and orange is incorporated. It's great on anything. Here in the western U.S., we use it on toast as well as a good, tart/sweet side for Christmas dinner...

If you still want to vary anything - cook the cranberries until they pop with orange juice and a good slug of port. Add orange zest and a cinnamon stick and simmer. Add the sugar to taste at the end, as this will lessen the chance of the fruit skins toughening in the cooking process.
