Proper Cranberry Sauce !

I always make the Cranberry Sauce for Xmas in my family, and its miles better than those awful little jars of cranberry jam !

Fresh Cranberries
Sugar
Port
Orange juice
Orange zest

Simmer the cranberries in a very small amount of water...maybe a tablespoon. Add the zest and juice of a nice big Jaffa orange.

Add some sugar, a little at a time. Don't forget, you can put sweetness in but its difficult to take it out. In my opinion, it should be tart rather than sweet.

Add some port, a glass at a time.....as much as you like really !

It will all reduce down nicely and will set well into some jars.

This can be made as much in advance as you like, as it keeps very well in the 'fridge.

Much better than shop bought !

I always make mine too, easy as pie and miles better. I use Jack Daniels for the alcohol splash.
cranberries ..sugar..port..wee bit water..micro 2 mins...

Minty...try adding some orange zest and peel next time....even better !

By the way,try adding a good slug of port to any gravy....fowl or beef. Its wonderful !

Prudie....having a bottle of JD in the house would be just too much of a temptation for me !
Rather add a good slug of Port to the cook (me) Mikey, I make my own sage and onion stuffing and buy Cranberry and Port sauce from M&S.

Yes I make my own too. I just simmer fresh cranberries in orange squash with a bit more sugar now the squash seems to be all reduced sugar. The fresh cranberry sauce I leave in a plastic container in the fridge and it lasts for weeks. Brilliant in turkey sandwiches!!
