What about things like curry, spag bol, shepherds pie, chilli con carne?
This totally sounds like my ex! when we first met he only ate chicken n potatoes! Eventually he branched out (thanks to my insistance lol) but what we found worked were things like:

Plain chicken or beef curry served on a naan bread (no rice or veg there) which can be cooked at home or bought from a take away.
Steak with peppercorn sauce.
Crispy chilli beef (bought in asda and tesco) served on waffles.
Pizzas
Minted lamb steaks with yorkshire puds and roasts
I also used to stuff a chicken breast with cheese and pepperoni and cover in a cheese sauce served with italian cubed potatoes (thank you frankie and benny!)

Hope thats of a lil help

thanx toothfairy we`ll try some of that some of it he does eat but she gotta do seperate meals
Oh, I really sympathise with your mum, I have had to cook for people like this too, not easy. If he lives with them then I would suggest that he cooks his own meals, its not like he has special dietary needs or is a veggie or vegan.

Personally if he was just there for one meal then I would make something he liked but if he is living there then 'tough t*tty mate, sort your own food out, its not a hotel'. Why should your mum be stressed out because a grown man does not like vegetables, he is happy enough to shove junk food and e-numbers in his gob, so for him I have no sympathy whatsoever.

Sorry if that sounds harsh but as had been said, he should be grateful someone is making him a home cooked meal.

Fish fingers and hash browns.
Beef soup and a crusty roll.
Macaroni cheese with lardons in the bottom of the dish

What's the matter with good old bangers and mash?He may even like some baked beans with that.
15?? tell him to make his own bloody food if he's that fussy
