recipes for veggies

I have some people coming in for dinner in a weeks time and am doing a serve-yourself dinner.

However one of them is vegetarian so I need a veggie dish, something like a casserole or stew that can be dished out to have with rice, I was thinking of something with lentil or beans but am open to any suggestions?

Would any of you have any good recipes you can recommend? I would like something that has been tried and can be recommended by some of you! Thanks!

There are plenty of vege sausages you could have or grill steaks or such like, all made with meat substitues like soya or quorn.
Starship - if you go down to the Search and type in vegetarian it gives you 281 results - most of them have some really great vegetarian recipes on them - especially the ones we answered around Christmas when people were looking for something special to fix for their vegetarian friends - I did the search for you, but I am not sure the link will work - but here goes:

Starship - out of the --------306-------- in the link I gave you - MANY of them are "tried and tested" by ABer's.
Try this:

butternut squash, red onion, red and green peppers, sweet potatoes - peel/cut into equal size chunks. Place in roasting tin, pour over good olive oil, add loads of good strong herbs - thyme, marjoram, etc. Season. Roast in hot oven for 20 mins. Add 'chunks' of tomamatoes and a few mushrooms, also cut into pieces. Finish for another 15 mins.

Turn onto plate, add rice - cook the rice in stock for extra flavours by the way - and eat with a nice crusty bread to get the juices.

Filling, tasty and looks nice too...
hey starship, must of my recipes cater for 4 or more. But you can freeze this.

Vegetable Mousakka
1 aubergine
onion
garlic
tinned chopped tomato/lentils/chickpeas
tomato puree
natural yoghurt
2 eggs.

Slice and fry aubergine.

fry onion and garlic in oil for 5 mins. Add tomatoes, puree 2tsbs water, drained pulses. Cook for 10 mins, season.

In large dish, layer, lentils, aubergine, lentils, aubergine.

Mix together egg and yoghurt. Cover with grated cheese. Bake in oven for about 40 mins.

Its delicious. Tried and tested by me and kids, and a favourite.
* meant add yoghurt and egg mixture on top of lentils, then cover with cheese. Sounds long winded, but its not.
