Why after a while honey turns into granules? When that happens, I discard it. Is there a way to revive it to its original consistency? I have tried microwaving it to make it all runny again, but that did not work.

There is no need to discard granulated honey. It would be good to know where your honey comes from. A lot of supermarket honey is "blended", mostly with inferior honey from Mexico. This may be the reason for granulation.

The best benefit from honey is to buy locally produced, as this not only supports the local economy, but also provides a degree of protection from local pollen-borne ailments ie hayfever. If you don't know where to buy local honey try googling on "farmers markets". This will open up a whole new world!

Even locally produced honey will crystallize. It's one of the reasons producers put 'Best Before' labels on their products, (usually indicating 18 month or 2 years), since it's likely that crystals will form after that time. They're sugar, harmless, and don't affect the taste. But some folk don't like the crunchiness.
The traditional method for getting rid of crystals is to place the jar in warm water until they've melted. Too much direct heat can scorch it. Refrigeration will speed up formation of crystals.,
Remember to not store it in the fridge - if I have mistakingly put it in the fridge, this always happens. Otherwise, just eat it faster! My son eats it like it is going out of fashion - his favourite combination is with jam and peanut butter. Yeuch!

They found honey in the pyramidsand after testing they found it was edible! The Manuka honey, one of the most expensive, is supposed to have healing properties, especially for the ulcerated skin of the elderly.

I never worry about the use by or best before date now, and just get out the wooden spoon and gently stir it back to it's original state.
