A quote copied from a website Milling is the process that creates the difference between brown and white rice. The variety of rice may be identical, but milling removes the husk from the grain and turns the brown rice to white. This is why milling is often called "whitening".
Milling scrapes off the rice bran (hard coating on the grain). So white rice is just rice with all the bran removed. Brown rice has the bran on it and as such is much healthier.
