Any simple fillings for tortillas please

A strange one this, but we had them at DIL's at the weekend - very fine shredded raw cabbage, hard boiled egg mashed up and loads of dill, salt & pepper. When she suggested them they sounded awful, but were actually very tasty.

if you mean flour tortillia wraps?

club sandwich style
poach some chicken breast (just chuck it in enough water to cover it makes it stay moist simmer it till the juices run clear when "stabbed") then cool it off in the fridge
grill some bacon, slice some tomato, slice of cheese and mayo..

spicy chicken
get a whole roasted chicken from a supermarket, strip the meat off, put with the following in a bowl, (half teaspoons of each)
tomato puree
chilli power
crushed garlic
hot / mild curry powder
mix in the chicken so it is all coated in the stuff
put on a baking tray, add slices of red and green peppers, onion and 1/8th'ed tomatoes
grill it and serve hot (as the chicken is already cooked just make sure it is piping hot and its done)
charring the chicken a little bit adds to the flavor

ceasar salad
you need cos lettuce, some ceasar dressing, shaved parmesan, and chicken (poached as above and chilled) mix it all up and wrap...


chips and cheese....

this is a great one for the kids!
put the wrap on a plate, put chips on, put cheese on, melt the cheese a bit under a grill, wrap (then serve on a different plate!)

My favorite is when I have leftover salmon (or tuna) - after dinner I I tear it into small pieces - add dry Italian Seasoning (herbs), chopped onion, olive oil & mayo. The next day, the flavors have blended - just fill your tortilla and turn it into a delicious wrap.
...the best cheese sandwich ever...

...grate some cheese, add some finely sliced spring onions, some fresh or sundried chilly to your preferance, sandwich together between 2 flour tortillas, slide into a nonstick frying pan, cook on each side until golden brown and cheese is melted, cut into slices like a pizza...mmmmmm

experiment with diferent fillings, cheese , sliced peppers and tuna is yummy

Frozen Spinach - Thawed
Eggs
Mix together and cook in a little margarine like you are cooking scrambled eggs.
They are great alone - but if you put some mayo on a warm flour tortilla and put on the cooked spinach & egg - it makes a great wrap hot or cold.
Fish Tacos

Warm the tacos.
Put the fried or grilled fish in it.
Garnish with:
Shredded white cabbage
Hot sauce
Sour Cream
Thinly sliced red onion
Thinly sliced green onion
Chopped cilantro leaves
Tomato Salsa

Baja Fish Tacos
Fish Tacos:
Oil
2 packages Tempura Batter Mix
1 can beer
1 teaspoon salt
1 teaspoon garlic powder
24 ounces boneless cod, cut into 2-inch pieces
6 corn tortillas
2 cups shredded cabbage
2 limes
Preheat a fryer or a deep pot halfway filled with oil to 375 degrees F. Mix 1 of the packages of batter, but only use 1/2 the required amount of water and use beer for the remaining amount instead. Add the beer until the batter becomes almost like a heavy cream consistency. Using the other package of batter add salt and garlic powder, coat cod pieces with the dry mix, then dip into prepared batter. Deep-fry for about 3 minutes, or until golden brown and cooked through.
White Sauce:
1 cup mayonnaise
1/4 cup milk
4 tablespoons lemon juice
1 teaspoon garlic salt
Mix all ingredients together and set aside.
Place fried cod pieces on warmed corn tortillas, add white sauce to fish, a little shredded cabbage and a squeeze of lime, to taste.
