I do not wish to appear controversial in this matter, but my personal preference would be for a band collar, which is sometimes called a Mandarin collar. Such a collar stands between one and two inches high, and, in my humble opinion, is modest enough for the shirt that you describe, but is, at the same time, sufficiently noticeable to complement and enhance your refined linen poet shirt.
