In terms of pastry making, Lady CG, I take the view that short crust, sweet crust, hot water and rough puff are do-able. Anything beyond that is "buy it".
That's what I've always tended to do, BM. I had an attempt at choux pastry the Christmas before last as I always do the pudding on Christmas Day if we got to his parents but 3 attempts all failed and so I knocked up a Nigella White Chocolate Cheesecake with my own homemade fruit compote instead. I think FIL was disappointed not to get his profiteroles.
I cant do choux pastry due to my chronic WRULD, Lady CG. My hands are knackered. I do all my pastry in the food processor apart from the hot crust which requires little working.
