Having spent most of today on this I'm left with only 2 clues to go ( there are extra letters produced by the wordplay)
28 across: Unit cooked the French biscuit (5) T?IL? ( I sort of want it to be tuile?) & 40 across: Game occupying evening informally for North African (6) N??O?E (?Nilote - but why?)
Now I've no idea what to do!!
31 down could be V SIGN?
I don't have an Oxford Dictionary of Humorous Quotations.
My extra letters make something like: Shameful exchange involving man woman eu a clued light??? which makes no sense at all!!
Can anyone help me please?

You're right about 31d - that should help you identify the man responsible for the 2nd part of the quote (the quote is well known but there are lots of versions - that's why a definitive source has been given).

You've gone wrong after '...man' - it's not 'woman', but - '... who made...'

Thank you all I'll see what I can do now, actually I'll probably continue tomorrow as I'm going 'boggle-eyed'!
...and it's '...unclued light' (ie 'answer') on the end.

There's a lot of highlighting to do - all in straight lines!
That last hint could be misleading - you'll see the quote running in parallel lines, but two of these are single cells.
