I need to make a large carrot cake for a party. Will it work if I just double the mixture I normally use and cook it a bit longer, or do I need a whole other recipe? If so, does anyone have one?

Make two of them - especially if you a re using a domestic oven - if you try to make huge cake in a normal oven the thing is likely to not cook through anyway.
