I love roasted garlic but I hate having to squeeze the roasted cloves out of the skin, what is the little knife called that is used to remove the roasted clove from the garlic called. My second question is it ok to remove the skin from the garlic cloves before roasting ?
Not sure about any special tool (perhaps a garlic press may do it?). The skin should be left on for roasting...it prevents the inside flesh from burning and thus becoming bitter.
gingejbee: I have seen a picture of this tool for scraping out roasted garlic cloves from the skin but it didn't say what it was called, it looks similar to a knife with a flat end, like a spade....lol
Roast in a little bag of foil with a little oil and that will prevent the garlic burning they take very little time to roast like this with or without thge skin on.
