Raspberry vinegar

I have found a recipe in a cook book (not a very helpful one) which says I can make raspberry vinegar by macerating fresh raspberries in wine vinegar. I've managed to find out what macerate means but I don't know how long to leave the fruit in for. Ant ideas out there? Thanks in advance for your help.

There are recipies that suggest you don't macerate the fruit, but leave it whole. You could Google 'raspberry vinegar recipe' and find a heap of suggestions, like at http://www.recipezaar.com/46465

Thank you, Heathfield. I've added the website to my favourites. Luckily I didn't mash the fruit 'cause the dictionary just said to soak or steep.

The longer you leave the fruit the more flavour can be achieved, and you can use fresh or frozen fruit - fresh is likely to be bteer in the long run. Leave the fruit whole, soak and strain. Vinegar will of course keep for along time in sealed bottles/jars. Reduce by boiling for a more intense flavour and serve over ice cream, or with game, and use as vinagrette.
