Recently I've been feeling excessively thristy during the night and wake up to sip water at least 3 times. I haven't changed my diet during this time. Any ideas or suggestions where I could learn more?

Perhaps the air in your bedroom is very dry...have you installed any new heating systems in your abode....other than that some tooth pastes and dental rinses dry up your mouth quit a lot or even if you have a head cold you might be breathing thru your mouth and it is drying up as a result....
I don't want to worry you, but this can be a symptom of diabetes. If it persists, I should certainly consult your GP. I hope the truth lies with one of Bluedolphin's suggestions.
