I'm looking at Cyprus for our holiday in May. We don't want a busy resort with any of the nightlife, just something a little quieter and more relaxing with good beaches / eating / shopping / tourist attractions. Where is the best place to go for this?

I'd suggest you look in the Polis area; Latchi would suit you, I think - some of the best fish restaurants on the island. You will need a hire car, though; public transport is pretty poor everywhere and virtually non-existent in that area. Latchi is about 40 minutes drive from Paphos with its Roman mosaics and Ptolemaic tombs (well worth a visit) and in easy reach of the Paphos Forest, Cedar Valley, Kykkos Monastery etc. To get to other major sites such as Kourion you'll have to go through Paphos first; allow a good hour and threequarters to Limassol, and at least two and a half hours to get to Nicosia.
Try the Proteras area, it on the east of the island so you will have to fly into Larnaca rather than the more commercial Paphos, It a beautiful resort with all the traditional Cypriot charm . the beaches are great, not massive but there are loads of them so at that time of the year their should be not trouble at all getting a prime spot�regarding the are you can hop on a bus or alternatively a car would be great for a few days.
You can travel to the border area that separates northern and southern Cyprus or fine some secluded bays in the middle of nowhere.
There are some really really nice 4-5 * hotel or alternatively they are still some really really cheap self catering deals to be had.
How about North Cyprus? Personally I preferred it to the south and much quieter. Kyrenia is a beautiful little place, ideally stay on the outskirts and close enough to walk or taxi in for the evening. The beaches on the north are reputed to be the best on the island, hire a jeep or similar and you can find a beach all to yourself. Cyprus Paradise specialise in this destination.
With Breezy on this one - try North Cyprus for a more peaceful and relaxing Cyprus holiday experience. There are plenty of great beaches, the local restaurants are good and great value for money, and there is certainly plenty to see. Do hire a car to explore; favourite drives include the mountain road to St Hilarion castle, the deserted road of the Karpas peninsula (apart from the wild donkeys!) and yes, even the road to Famagusta and Salamis, because both places are so worth the time and trouble.
